Hope the winter isn’t ‘frost bite cold’ out there.

Today’s prompt had me thinking about so many things that could be my best local food and I can’t deny, Benjamin Watch properly represented my first love. https://musanjufukavubu.wordpress.com/2020/06/03/of-my-favourite-local-food/ I love to have it with Sukuma wiki or pumpkin leaves specially prepared by my mother and her secret ingredients.

But as I was reading the ‘If I Were A Boy Series’, by Joseyphina Amoako, I realized in Ghana, plantain is a thing and there’s this special recipe they have of it called kelewele. I love plantain, in crisps, fried, boiled or roasted and I’m sure this recipe by Joseyphina will be my new found love once I get round to making it.

So, here’s my guest blogger for today, lets warmly welcome her by reading her amazing recipe.

For a taste of my culture.

I’m an African; hailing from Ghana, affectionately called the Black Star of Africa. We are a passionate people, hospitable to a fault, we love our music and dance and we definitely are crazy about our food.

One thing we are always eager to share with visitors is our wide range of delicacies. Most foreigners are treated to “fufu” (pounded plantain and cassava) with soups of various types; “waakye” (boiled rice and beans) and “kelewele” (spicy fried plantain).

Kelewele can be eaten with rice or as a snack with groundnuts/peanuts. It’s very simple to prepare and a snack that everyone enjoys.

How to prepare Kelewele

 Ingredients:

Ripe plantain (4 fingers) Pepper, onion, ginger, garlic (to blend) Oil for frying

Method: Blend pepper, onion, garlic and ginger together with a little salt to taste.

Cut plantain into small diagonal shapes. Toss plantain into pepper and spice mixture and set it aside for optimal absorption. Heat up skillet or pan and then add oil for it to heat until medium-high hot not smoking. Fry plantain in batches, turn once until golden brown. Don’t overcrowd the pan as that will make the frying take longer and make the plantain soggy. Use a perforated spoon to take out the plantain out of the pan into a sieve lined with paper towels.

Serve warm with groundnuts or your preferred choice of protein.

    1. Haha yep ogambaki? It’s gonja for us but deep fried with slices. Sounds yummy right?
